What is Edible Bird’s Nest?

Edible swiftlet nest, commonly known as edible bird’s nest, is a natural nest made from the hardened saliva of swiftlets, primarily the Aerodramus fuciphagus species. Found throughout Southeast Asia, it has long been regarded as one of the region’s most prized delicacies and is often referred to as the “Caviar of the East.” (Yan et al., 2021).

During the breeding season, male swiftlets produce a saliva-rich secretion that hardens into a cup-shaped nest, providing a safe place for raising their young. Once the nesting season has ended, the nests are carefully harvested, cleaned, and prepared for consumption. Edible bird’s nest has been treasured in Traditional Chinese culture since the Tang Dynasty (618–907 AD) and continues to be enjoyed today as a premium natural delicacy.
